- In the bottom of a highball glass, add ginger, rosemary, and spices. Pour in honey, and muddle these ingredients together, so that the rosemary and ginger break a part and spread their oils and flavors into the honey syrup. Then add ice, and pour in lemon juice per desired acidity level. Garnish with rosemary sprig
Notes
Honey Syrup is equal parts honey to hot water. It makes the honey easier to work with in beverages, and keeps a level of consistency given that the viscosity of honey can vary from type to type. Simply mix the honey and hot water, and allow to cool before use.
