Prepare matcha by whisking 1 teaspoon matcha in 1/2 ounce hot (but not boiling) water for a thick mixture to avoid a watery matcha mocktail. In a separate container, steep chamomile in hot water. Set aside.
Add honey, basil, and 2 ounces of chamomile tea concentrate to a tall glass. Muddle basil. Stir honey if not dissolved by muddling.
Add in mandarin or orange juice and soda water, then ice.
Stir and pour in matcha preparation, watching the mixture of green with orange.
Sprinkle cinnamon atop. Stir to mix flavors for balance, add more honey if desired, and garnish with basil leaf and mandarin/orange slice or wheel.
