Eclipse - A White Wine Cocktail

Sip to the eclipse with this crisp white wine cocktail. Mixing chardonnay, rosemary, ginger, and lemon, infused with ritual and garnished with a red sphere, this is the perfect drink recipe to celebrate the eclipse.

Ingredients
  

Blood Orange Ice Cube Sphere Eclipse Garnish (Optional)
  • 4.5 ounces blood orange juice freshly juice, see notes for other options
White Wine Eclipse Cocktail
  • .25 ounce Absinthe Rinse optional
  • 2 thin slices Ginger coin
  • 1-2 sprigs Rosemary
  • .75 ounces simple syrup instructions in notes (if needed)
  • 1 ounce lemon freshly juiced
  • 2 ounces Phantom Wine Chardonnay use code WITCHCRAFT for $1 shipping
  • 1 blood orange ice cube sphere OR .5-1 ounce, freshly juiced

Method
 

Blood Orange Ice Cubes
  1. If preparing blood orange or alternative juice ice cubes, prepare at least 6 hours in advance. Pour juice into 2" spherical molds and place into freezer for 6 hours or longer. (When you use these, make sure to strain your drink BEFORE adding the spheres. If you strain the drink over the sphere, if will immediately behind diluting and turn your drink red before you get to enjoy the visual).
White Wine Eclipse Instructions
  1. OPTIONAL Absinthe Rinse: Start the drink ritual with an absinthe rinse, if using. This both chills the glass, and adds a thin layer of absinthe to enhance the flavors, but not overwhelm. To do so, add 1-3 ice cubes in your stemmed glass. Add absinthe, then swirl and dump out into your sink. Dump out as much as possible--you only want a thin layer so as not to overwhelm the chardonnay.
  2. To your shaker, crumble up ginger. Add rosemary, simple, then lemon for the moon and chardonnay. Add ice and shake hard, so that rosemary and ginger properly infuses into the recipe.
  3. Strain the drink into your chilled, rinsed glass. Gently place your blood orange sphere cube, or carefully layer 1/2-1 ounce fresh blood orange juice atop using the back of a spoon. Enjoy!

Notes

  • Consider pre-chill ing your chardonnay to reduce dilution
  • Simple syrup: measure separately, then mix equal parts hot water and sugar. Let cool, then use as needed. Store in refrigerator and use before 2 weeks.
  • If you cannot wait for the spheres to freeze, you can gently layer .5-1 ounce of the fresh juice atop the drink. If you do so using the back of a spoon to control the speed, it should layer atop the drink for a cool eclipse effect.
  • If you cannot find blood orange juice, try cranberry and.or pomegranate juice.
